Perfect Bite Toffee

Delicious Toffee with the perfect texture.

       If the thought of making toffee makes you feel intimidated, you are at the right place.  Follow the instructions below and you will have success in making this amazing recipe that everyone will rave about. The toffee is crunchy, a little bit grainy (not chewy) and the roasted almonds bring out a nice texture and flavor that compliments the hardened butter and sugar. Ingredients needed:

2 cups raw Almonds, divided 

1 cup Milk Chocolate (I use Ghirardelli chocolate chips) The higher the quality the better. 

1 pound salted butter (4 sticks or 2 cups) 

2 cups white granulated sugar 

5 tablespoons water 

3 tablespoons light corn syrup

Steps

  1. Combine 1 cup raw almonds and 1 cup milk chocolate of your choosing in a food processor and pulse until finely chopped. You should have 2 cups worth. Put the mixture in a bowl.

2. On a baking sheet, spread 1 cup of the chopped almond and chocolate mixture. It does not need to go to the edges. Start in the center of the pan and spread evenly. Set aside the other 1 cup of the chopped mixture for later.


3. In a large sauté pan (about 12 inches wide so the frothy toffee mixture does not spill out) combine the all of the butter, sugar, water, and corn syrup over medium heat. Stir frequently until the mixture comes to a boil.

Once boiling, add the raw almonds.

4. Once the mixture comes to a boil, stir in one cup of raw almonds (they will get nicely browned, and toasty) and turn the temperature just below the high heat line, stirring constantly.

Perfect Golden Brown Toffee Mixture.

5.This step is important! Keep stirring the toffee mixture until it reaches a nice golden brown color. This usually takes me about 5 minutes. Do not let it get too dark. A nice golden brown is just right.


6. Once it reaches the golden brown color, immediately pour the mixture over the top of your chopped almonds and chocolate mixture on your baking sheet.

7. Once the toffee mixture is poured, sprinkle (do not spread with a spatula) the rest of chopped almonds and chocolate chip mixture over the top of the toffee, evenly.

8. Let the mixture harden for about thirty minutes to an hour and break up with a butter knife to the sizes you desire. You are done. Eat and Enjoy!
