Showstopper Pecan Pie

Delicate top layer gives way to a rich, smooth center.

       Here is my Pecan Pie recipe that is so incredibly simple anyone can make it. It takes about five minutes to put together, and doesn’t compromise on flavor. It’s absolutely delicious! Crust:

1 unbaked Insanely Flaky Pie Crust

Flaky satisfaction looks like this, before it’s baked.


Filling: 

3 eggs

¼ cup sugar

¼ cup brown sugar 

½ cup light corn syrup

½ cup dark corn syrup

1 cup coarsely chopped pecans 

1 tsp pure vanilla extract 


Steps:

Preheat oven to 350 degrees 

  1. Prepare the pie crust. Once your crust is assembled and ready to bake, set aside.

  2. Whisk together 3 eggs in a medium bowl, until combined. Add sugar, corn syrup, chopped pecans (they will get nice and toasty as they cook), and pure vanilla extract to the eggs. Stir to combine.

  3. Pour into your pie crust.

  4. Bake in the oven at 350 for 45-55 minutes, until the crust is golden and filling is no longer jiggly. The slightest jiggle is okay. It will continue to firm up as it cools.

You’re done! Now I want a pecan pie… I better go make one.
